Comfort Foods: Grilled Pimiento Cheese

How delicious does that look?  I know you're mouth is watering right now -- it was epically incredible and the perfect hangover cafe sandwich.

The trick?  Perfect pimiento cheese.  Now, since I'm from the south and we tend to put mayonnaise on everything (or ranch.. which is basically the same thing but with spices.. err), I was always used to and still love Stan's pimiento cheese.  However, as far as spreads go -- it's not friendly to my waist line if I ate it as much as I'd like to.

Then Moms started making her own pimiento cheese.  Y'all.  It's perfect.  It's not my recipe to divulge but the trick is to use aged sharp cheddar.  And like every good Southern recipe -- Duke's mayonnaise.

This pimiento cheese goes so well on everything -- crackers, bread, steak.. you name it.  Divine.

Next on the Book Queue

The book I'm currently reading and am almost done with.. is somewhat abysmal.  Maybe that's harsh, but it's kinda all over the place (and not in an intentionally thoughtful way) and some of the dialogue is a little contrived.  Fine.  Now I usually quit reading books that I'm not feeling (why waste my time, right?) but there's this random part in the middle of the book that seems like it is apart of an entirely different book (I won't ruin it for you, but then again, I also don't recommend it).. and I want to figure out where he's going with it all.

However.  I am excited for the next book I'm going to read -- Cutting for Stone.  Moms gave it to me for Christmas, and it comes highly recommended.  I'll let you know how it goes.

Frijoles Borrachos

Ya'll may remember when I was talking about how I usually didn't like beans, but the Tex Mex beans I tried in San Antonio were absolutely divine?

Well, the next day, my childhood friend CQ was having people over for bbq chicken (and all the fixins) so I thought that making these beans would be perfect.  (and yep, its the same night as the smoking incident)

After reading my last post about beans, Moms gave me a few tips on making these beans really stand out.  Unfortunately (for JP haha) these suggestions were to add bacon (and sometimes sausage).  Also -- canned pinto beans are a better bet for time saving because rehydrating dried beans can sometimes be obnoxious.  And, the Goya Ham seasoning is also key -- buy a box and use about 2 or 3 packets.

So I took these suggestions and tweaked it a little.

Frijoles Borrachos a la Sarah

-Brown a few slices of (peppered turkey) bacon on the bottom of a pan (cut up into little pieces)
-Saute a handful of frozen onions and some minced fresh jalepeno for a few minutes
-Add 2 cans of pinto beans (with the majority of the "juice" -- sick word I know -- poured out)
-Add 1 bottle of (dark preferably) beer -- I used Shiner (not quite dark, but not Bud Light)
-Stir this all together and let it simmer for about 10 minutes
-Add some cayenne pepper, salt, reg black pepper, and a capful of liquid smoke (even Whole Foods carries it.. and a little goes a long way -- sold in the condiment aisle)
-Let this all come to a boil, then lower the temp and simmer for about 30-45 minutes (or however long it is until dinner)

And I'm not much for beans, but these were pretty good!

Poor and Hungry: Honey Bran Blueberry Muffins

I'm a sucker for blueberry muffins -- it reminds me of my childhood, and it's always been a comfort food of mine.  Moms taught me this trick when I was young that you can buy a huge bushel (basket?) of blueberries, fresh from the farmer's market/grocery store -- use them fresh for a while, and before they go bad, freeze them.  That way you get the benefit of fresh blueberries, and also get to use blueberries all year around.

I'm still using the blueberries I bought in season (summer) -- and last weekend I was having such a craving for some muffins!  Moms told me the simplest way to get a healthy and quick muffins is to use the Martha White mix, add some milk, blueberries, and in about 14 minutes you've got some stellar muffins.

..and she was right!

So Poor and Hungry presents Honey Bran Blueberry Muffins:

Follow the directions on the bag (which, btw cost less than $2), add a handful or two of frozen blueberries and cook for about 14 min or so.  I use silicone muffin "tins", which work great and are really easy to use.

And they were delicious.

San Antonio!

So last weekend, Moms, the Wifey and I went to San Antone for the weekend.  Wifey's family lives in the city, so we did some visiting of the in-laws and exploring the city.  I forgot to take a ton of pictures, but I did catch this cute little fam on the way to the rodeo.  Only in Texas.  The rodeo was quite interesting -- and I even got some dope cowboy boots!  (Thanks to the Wifey!)

And while I do think I still may do pediatrics, I did get a taste of what dermatology may be like -- lots of work, but a schedule you set yourself, while also living in an incredible home with an even more incredible closet..?? Um, sign me up.  I cannot explain how immaculate her wardrobe was.. I literally die.  LV, Chanel, YSL.. a girl's dream.

But overall it was a really fun trip -- did the Riverwalk, drank lots of margs, and ate some quality Mexican food.  Am looking forward to a repeat trip for sure.

Latest Purchase.

Burberry.  The perfect raincoat.  It folds up into a little pouch.  Lightweight, chic, portable.  What's not to love?

Thank you Moms.  Her and I are beginning a Burberry obsession, I believe.  There are worse things!

You're so Vain.

[Apartment Therapy]

Moms gave me this gorgeous vanity table and bench a while back, and it has always traveled with me.. but I've never quite used it for its purpose. Currently, it's holding a lot of my jewelry, and some stacks of magazines.. but in no real orderly manner. Once I move into my new apartment in NOLA this summer, I definitely want to use it for a vanity. Mirror, organization and all. I love these images above and can't wait to really use mine.

Obsessed.

Now, if you know me, you know that I adore Burberry. My mom has begun my obsession in college when my birthday/grad presents entailed some pieces that are now my wardrobe staples. Their new collabo with Colette has me really excited. Take a look:
